Position overview
The dough chef is responsible for precisely cooking dough according to recipeYou must ensure that the dough quality is up to the company standardMachinery must be cleaned from all residues and sanitized entirely.
Essential functions
Dough area’s work definition
Ensure all crackers are cooked and baked safely and efficiently according to company standard.
Perform a final inspection of raw materials in accordance with the company’s quality standard in a safe and efficient manner.
General responsibilities
Report promptly to the shift supervisor when any issues arise.
Call the shift maintenance team if you cannot resolve any machine related issue.
Call the shift qa technician if you have quality related issue.
Call the packaging lead when start/end of the batch and if you find any issues with the crackers.
Follow and sign off dough chef check list during the cooking process.
Ensures batch times are meeting the time deadlines as posted in the production batch scheduleTalk to the shift supervisor and decide cooking timing for next batch.
Performs minor maintenance and trouble shoots machines when required to keep cracker quality and production efficiency.
Ergonomically perform all tasks to ensure safety in compliance with gmp standards, osha regulations, and company policies.
Adhere to required ppe standards in accordance with the task requirements.
Operates forklift on daily basis.
Logging waste and downtime data accurately.
Perform and sign off master sanitation sheet every shift.
Responsible for loto.
All paperwork must be completed on time and accurately.
Logs all information on the dough chef communication log regarding machine break downs, new tasks or guidelines assigned by management and/or any other pertinent information need by the following shift during shift handover with the following shifts dough chef or; ensuring all information has been passed on.
Enters batch information onto each line white board.
Assists with packaging when instructed by supervisor.
Quality inspection and machine inspection responsibilities
Responsible for performing pre-op check list before starting every shift.
Responsible for checking actual vs setting oven temperature and weight of dough/cracker after 10 and 30 minutes from the start of the batch then every hour.
Responsible for checking depositor settings, flattener settings, sheeter settings and baking time before the start of every batch.
Responsible for performing magnet cleaning on all 4 ingredients hoppers after each use.
Also, cleaning the magnets on the grain hopper up top.
Responsible for logging batch start/end time, kettle temperature, cooking time and water volume.
Responsible for logging water meter before/after putting first water.
Lot change, washout and hot rinse responsibilities
Remove dough from the thermometer in the kettle every batch with hose water.
Increase the pump speed to drain all dough from the kettle.
Perform washout and hot rinse with correct stepsCleans and sanitizes all equipment in dough area ensuring proper sanitation is done by following sop’s and sanitizing procedures during shut down or at any flavor change; logging the pertinent data.
Training and supervising responsibilities
Oversees the dough area to ensure all machines are operated in a safe and effective way.
Cover and train other or new dough chefs.
Other duties and responsibilities
Comply with all safety and quality policies and procedures; reports all unsafe activities to supervisor and/or human resources.
Participate in proactive team efforts to achieve departmental and company goals.
Provide leadership to others through example and sharing of knowledge/skill.
Perform other duties as assigned.

Required education and experience
Must have successfully completed mgc certification program for the following positions: sorting area, dough production area, packaging area, production head baker, production baker, production, assistant dough chef, and dough chef
Certified forklift operator

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manualsAbility to write routine reports and correspondenceAbility to speak effectively before groups of customers or employees of organization
Ability to add and subtract two digit numbers and to multiply and divide with 10’s and 100’sAbility to perform these operations using units of american money and weight measurement, volume and distance.
